I used it for the lobster Ravioli at my dinner party a couple of weeks ago, but feel that despite the intensity of the lime flavor, it is fairly versatile and would go well with chicken, shrimp, or even skirt steak. It’s also really easy.
2 fairly ripe avocados
5 key limes or 1 -2 regular limes, depending on desired limeyness
Zest of 5 key limes or 1-2 regular limes
½ tsp lime oil
1 tbsp olive oil
Materials: Blender/food processor, wire mesh strainer, fine grater or zester, squirt bottle, juicer (if desired)
Using a zester or fine grater, remove the zest from the limes and set aside.
Using a juicer (or you can just squeeze really hard) juice the limes, making sure to remove any seeds. Add to zest.
Peel and slice avocados. Slicing them helps ensure that there won’t be any chunks left when finished blending.
Place avocado slices, lime juice, lime zest and lime oil in blender and mix until smooth.
Drizzle in olive oil and continue to combine until desired consistency is reached (you can add more oil to have a more liquid puree)
Remove mixture from blender or food processor and pass through wire mesh strainer using the back of a large spoon.
Add salt and pepper to taste
Place mixture in squirt bottle to decorate (for you pax)

I know, I know...the picture is already on the website, but I didn't have a whole lot of time to make something else.
